Description
Quick and easy gluten-free egg fried rice ready in just 15 minutes. Perfect as a main or side.
Ingredients
1 stalk green onion
2 tbsp frozen peas and carrots
1/2 small yellow onion
2 large eggs
1 tbsp oyster sauce
2 tbsp soy sauce
2 cups day-old white rice
1 tbsp cooking oil
1 tsp toasted sesame oil
1 tbsp Shaoxing rice wine (optional)
Toasted sesame seeds for garnish
Instructions
1. Dice the onion, chop green onions, and beat the eggs.
2. Heat oil in a skillet over medium-high heat. Sauté diced onions.
3. Add peas and carrots. Stir-fry for 1-2 minutes.
4. Push veggies aside. Scramble the eggs on the other side.
5. Add rice and stir to combine.
6. Pour in soy sauce, oyster sauce, and Shaoxing wine. Stir-fry well.
7. Finish with sesame oil. Garnish with green onions and sesame seeds.
Notes
Use leftover rice for best results.
Customize with your choice of protein like chicken or shrimp.
Store leftovers in the fridge for up to 3 days.
