This Sugar Cookie Cheesecake is a festive dessert with a buttery sugar cookie crust, creamy cheesecake filling, and baked-in sugar cookie dough balls. Perfect for Christmas or any celebration!
Ingredients
Refrigerated:
5 large eggs
1 egg yolk
Baking & Spices:
1/2 tsp baking soda
2/3 cup cookie dough balls
3 1/4 cups all-purpose flour
2 2/3 cups cane sugar (organic preferred)
1 tsp salt
3 tsp pure vanilla extract
1 cup white chocolate chips
Dairy:
1 1/4 cups unsalted butter
32 oz cream cheese, softened
3/4 cup heavy cream
5 tbsp milk
3/4 cup sour cream (or Greek yogurt, room temperature)
Other:
1/3 cup Christmas sprinkles (jimmies)
Instructions
1. Preheat the oven to 325°F (163°C). Line a springform pan with parchment paper.
2. Beat butter and sugar until light and fluffy. Add flour, baking soda, salt, and vanilla. Mix to form a soft dough.
3. Press dough into the bottom of the pan to create the crust. Bake for 10 minutes, then cool.
4. In a large bowl, beat cream cheese until smooth. Add sugar and mix well.
5. Add eggs one at a time, then blend in sour cream, milk, heavy cream, and vanilla.
6. Fold in cookie dough balls and white chocolate chips.
7. Pour batter over crust and smooth the top.
8. Bake in a water bath for 75 minutes or until edges are set and the center jiggles slightly.
9. Turn off oven and let the cheesecake rest inside for 1 hour.
10. Cool completely, then refrigerate for 6 hours or overnight.
11. Top with whipped cream and Christmas sprinkles before serving.
Notes
For best results, use room-temperature ingredients.
Avoid overmixing the batter to prevent cracks.
Store in the refrigerator for up to 5 days or freeze for 1 month.
