Ingredients

2 chicken breasts

1/4 cup cilantro, chopped

2 cups corn, fresh or frozen kernels

1 lime

1 tbsp mayonnaise

1 cup rice, cooked white or brown

1 tsp chili powder

1 tsp smoked paprika

Salt and pepper, to taste

1 tbsp olive oil

1 tbsp butter

1/4 cup Cotija cheese

1 tbsp sour cream


Instructions

1. Season chicken with chili powder, smoked paprika, salt, and pepper.

2. Heat olive oil in a skillet over medium heat.

3. Cook chicken breasts until golden and fully cooked. Slice and set aside.

4. Melt butter in a separate pan and add corn.

5. Season corn lightly and cook until slightly charred.

6. Stir in mayonnaise, sour cream, lime juice, cilantro, and Cotija cheese.

7. Place cooked rice in serving bowls.

8. Top rice with sliced chicken and creamy street corn mixture.

9. Garnish with extra Cotija and cilantro before serving.

Notes
