Ingredients
2 Chicken breasts
1/4 cup Cilantro
2 cups Corn, fresh or frozen kernels
1 Lime
1 tbsp Mayonnaise
1 cup Rice, cooked white or brown
1 tsp Chili powder
1 tsp Paprika, smoked
Salt and pepper
1 tbsp Olive oil
1 tbsp Butter
1/4 cup Cotija cheese
1 tbsp Sour cream
Instructions
1. Season chicken with chili powder, smoked paprika, salt, and pepper.
2. Cook chicken in olive oil until golden brown and fully cooked, then slice.
