Description
Slow cooker teriyaki chicken is tender chicken cooked in a sweet and savory garlic-ginger sauce. Serve over rice or noodles.
Ingredients
1 1/2 pounds boneless skinless chicken breasts
2 teaspoons minced garlic
2 teaspoons minced ginger
1/4 cup honey
3 tablespoons brown sugar
1/2 cup low sodium soy sauce
2 teaspoons toasted sesame oil
2 tablespoons rice vinegar
1/4 cup cold water
2 tablespoons cornstarch
1 tablespoon sesame seeds
2 tablespoons sliced green onions
Instructions
1. Place chicken breasts in the slow cooker.
2. Whisk together garlic, ginger, honey, brown sugar, soy sauce, sesame oil and rice vinegar.
3. Pour sauce over chicken.
4. Cover and cook on HIGH for 3 hours or LOW for 5-6 hours.
5. Remove chicken and shred.
6. Strain sauce into a saucepan and simmer.
7. Mix cornstarch with water, add to sauce, and bring to boil 1-2 min until thickened.
8. Toss shredded chicken in sauce.
9. Garnish with sesame seeds and green onions, then serve.
Notes
Substitute chicken thighs for juicier meat.
Adjust honey or sugar to taste.
Marinate chicken for 30 minutes before cooking for extra flavor.
