A creamy, flavorful, Mexican-inspired Slow Cooker Street Corn Chicken made with tender chicken, sweet corn, chili spices, and fresh cilantro. Perfect for tacos, bowls, or meal prep.
Ingredients
1 lb boneless chicken breasts or thighs
2 cups fresh corn
2 cloves garlic, minced
1/2 tsp onion powder
1/2 tsp chili powder
1/2 tsp smoked paprika
4 oz cream cheese
1/3 cup cotija cheese
1 lime, juiced
Fresh cilantro
Instructions
1. Place chicken in the slow cooker.
2. Add corn, garlic, onion powder, chili powder, and smoked paprika.
3. Top with cream cheese.
4. Cook on low for 4 hours or until tender.
5. Shred chicken in the cooker and mix well.
6. Stir in lime juice.
7. Top with cotija and cilantro before serving.
Notes
Serve in tacos, bowls, or over rice.
Adjust chili powder for heat preference.
