Description
A hearty, comforting Slow Cooker Cowboy Casserole made with ground beef, potatoes, beans, corn, and melted cheese. Easy to prepare, perfect for busy nights, and great for meal prep.
Ingredients
1 lb ground beef
1 can corn, drained
1 tsp garlic powder
1 can kidney beans, rinsed and drained
1 tsp onion powder
4 cups potatoes, diced
Sour cream and chopped chives (for serving)
1 can tomato sauce
1/2 tsp black pepper
1 tsp smoked paprika
1 tsp salt
1 cup cheese
Instructions
1. Brown the ground beef in a skillet and drain any excess fat.
2. Dice the potatoes into small cubes.
3. Place beef, potatoes, corn, kidney beans, garlic powder, onion powder, paprika, salt, and pepper into the slow cooker.
4. Pour tomato sauce over the mixture.
5. Stir to combine.
6. Cover and cook on low for 6 hours or high for 3 hours.
7. Sprinkle cheese on top and allow it to melt before serving.
8. Serve with sour cream and chopped chives.
Notes
Use any shredded cheese you prefer.
Add diced jalapeños for extra spice.
This casserole makes excellent leftovers for lunch the next day.
