Ingredients
1.5 lbs beef chuck roast, cut into chunks
4 cups beef broth
3 cups water
4 cloves garlic, minced
1 onion, sliced
1 tbsp grated ginger
1/4 cup soy sauce
2 tbsp sesame oil
2 tbsp brown sugar
2 packs fresh ramen noodles
1 cup baby spinach
2 sliced green onions
Soft-boiled eggs (optional)
Sriracha or chili oil (optional)
Instructions
1. Season beef chunks with salt and pepper.
2. Add beef to the slow cooker.
3. Add sliced onions, minced garlic, and grated ginger.
4. Pour in broth, water, soy sauce, sesame oil, and brown sugar.
5. Cover and cook on low for 8 hours or high for 4 hours.
6. Shred beef when tender.
7. Cook ramen noodles separately according to package directions.
8. Stir baby spinach into the slow cooker to wilt.
9. Ladle beef and broth over cooked noodles.
10. Garnish with green onions, eggs, or chili oil.
Notes
Adjust spices to your heat preference.
Add veggies like mushrooms or bok choy for variety.
Use egg noodles if ramen is not available.
