Description
A rich and creamy One Pot French Onion Pasta made with caramelized onions, cremini mushrooms, garlic, thyme, and orecchiette simmered in savory broth.
Ingredients
1/4 cup olive oil
3 yellow onions, thinly sliced
4 garlic cloves, minced
8 oz cremini mushrooms, sliced
1 tbsp fresh thyme
1/2 cup dry white wine
2 tbsp all-purpose flour
2 cups beef broth or vegetable broth
2 cups water
12 oz dried orecchiette or other short pasta
1 tbsp sherry vinegar
Salt and black pepper to taste
Fresh herbs and toasted breadcrumbs for serving (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat.
2. Add onions with a pinch of salt.
3. Cook 25–30 minutes until deeply caramelized, stirring often.
4. Add garlic, mushrooms, and thyme.
5. Sauté 3–4 minutes until mushrooms soften.
6. Deglaze pan with white wine.
7. Add flour and cook 2–3 minutes until thickened.
8. Pour in broth and water.
9. Season with salt and pepper.
10. Bring to a boil.
11. Add pasta and reduce heat to a simmer.
12. Cook until pasta is tender and sauce thickens.
13. Stir in sherry vinegar.
14. Taste and adjust seasoning.
15. Serve topped with fresh herbs or toasted breadcrumbs.
Notes
Caramelizing the onions slowly is key for maximum flavor.
Use vegetable broth for a vegetarian version.
Sherry vinegar brightens the dish and balances richness.
