Description

A Greek-inspired Mediterranean grilled cheese packed with mozzarella, feta, ricotta, spinach, sun-dried tomatoes, and olives. It melts beautifully and makes a quick, flavorful meal.


Ingredients

1 cup chopped spinach leaves

1/2 cup shredded mozzarella or cheese of choice

2 Tablespoons crumbled feta cheese

2 Tablespoons ricotta cheese or Greek yogurt

2 Tablespoons sun-dried tomatoes, drained and chopped

1 Tablespoon sliced black or Kalamata olives

4 slices whole grain bread or crusty bread of choice

2 Tablespoons butter


Instructions

1. Microwave the spinach for 45 seconds or until wilted.

2. Add mozzarella, feta, ricotta, sun-dried tomatoes, and olives. Mix well.

3. Spread the mixture onto two slices of bread.

4. Top with the remaining bread slices.

5. Spread butter on the top sides of each sandwich.

6. Heat a skillet over medium-low heat. Place sandwiches buttered-side down.

7. Butter the other sides while cooking.

8. Cook until golden and cheese is melted, about 2 minutes per side.

9. Slice and serve hot.

Notes

Best enjoyed immediately.

Store in an airtight container for up to 24 hours.

Reheat in a skillet or air fryer for best crispiness.
