Ingredients
- 1 ripe avocado
2 slices of whole-grain bread
1 handful of fresh spinach
2 eggs (poached or fried)
1 tbsp olive oil
Salt and pepper to taste

Instructions
Toast the whole-grain bread until golden and crispy.
In a pan, sauté spinach in olive oil until wilted, and season with salt and pepper.
Mash the avocado and season with salt and pepper.
Poach or fry the eggs to your preference.
Assemble the toast: Spread mashed avocado on the bread, top with sautéed spinach, and finish with a poached egg.
Add red pepper flakes for extra flavor (optional).
