Ingredients
3 lb boneless chuck roast 3 lbs yellow onions, sliced 2 cloves garlic, minced 1 sprig rosemary 1 bay leaf 2 1/2 cups beef stock 1 cup red wine or extra beef stock 1 tbsp all-purpose flour or gluten-free flour 1 tsp black pepper, freshly ground 1 tsp sea salt, fine 1 tbsp maple syrup or brown sugar 3 tbsp extra virgin olive oil
Instructions
Heat olive oil in a skillet and sear the roast on all sides. Caramelize onions with garlic and maple syrup until golden brown. Transfer onions to a Dutch oven and place seared roast on top. Add beef stock, red wine, bay leaf, and rosemary. Cook on low for 6-8 hours until meat is tender. Remove roast, thicken sauce with flour slurry, and simmer 5 minutes. Slice roast and serve with caramelized onions and gravy.
