This Instant Pot Cajun Potato Soup is creamy, spicy, and packed with comfort. Tender potatoes, smoky bacon, Cajun spices, cheddar, and heavy cream combine to create an easy, flavorful soup perfect for busy weeknights.
Ingredients
1/2 cup bacon bits
2 cloves garlic, minced
1/4 cup sliced green onions
1 medium onion, diced
4 cups diced potatoes
4 cups chicken broth
1/4 tsp black pepper
1 tsp Cajun seasoning
1/4 tsp cayenne pepper
1/2 tsp paprika
1/2 tsp salt
1 tbsp olive oil
1/2 cup shredded cheddar cheese
1 cup heavy cream
Instructions
1. Turn Instant Pot to sauté mode and heat olive oil.
2. Sauté onions until soft, then add garlic and cook 1 minute.
3. Add potatoes, bacon bits, chicken broth, and seasonings.
4. Stir to combine.
5. Seal lid and cook on high pressure for 10 minutes.
6. Allow 5-minute natural pressure release, then carefully release remaining pressure.
7. Stir in heavy cream.
8. Add cheddar cheese and stir until melted.
9. Serve hot, garnished with green onions.
Notes
Increase cayenne for more heat.
Blend part of the soup for a thicker texture.
Smoked paprika enhances the smoky flavor.
