Homemade Chicken Ramen – Rich Broth, Tender Chicken, and Perfect Noodles

Description

A comforting homemade chicken ramen with juicy chicken, tender noodles, mushrooms, Bok Choy, and rich broth. Finished with fresh toppings and ready in under an hour.


Ingredients

Scale

2 tablespoons olive oil, divided

2 tablespoons butter, divided

8 oz mushrooms (baby bella)

1 large chicken breast

Salt and pepper

1/2 cup dry white wine

1 tablespoon butter

3 cloves garlic, minced

6 cups low sodium chicken broth

2 tablespoons low sodium soy sauce

2 teaspoons hot sauce

2 teaspoons honey

3/4 teaspoon toasted sesame oil

2 (3 oz.) packs instant ramen noodles (without seasoning packet)

6 leaves Bok Choy, roughly chopped

3/4 teaspoon onion powder

3/4 teaspoon mustard powder

1/4 teaspoon ground ginger

1/8 teaspoon white pepper

1 pinch red pepper flakes

Green onions for serving

Honey roasted peanuts for serving

Soft-boiled eggs


Instructions

1. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large pot.

2. Sauté the mushrooms until golden and remove.

3. Slice chicken in half, pound thin, and season with salt and pepper.

4. Sear chicken in remaining olive oil and butter, then rest and slice.

5. Deglaze pot with wine and reduce by half.

6. Add butter and garlic; cook 2 minutes.

7. Add broth, soy sauce, hot sauce, honey, sesame oil, and seasonings.

8. Bring to a gentle boil; reduce for 10 minutes.

9. Add ramen and cook 1 minute.

10. Add Bok Choy, mushrooms, and chicken; simmer 3 minutes.

11. Serve with green onions, peanuts, and soft-boiled egg.

Notes

Soft-boiled eggs: Bring to gentle boil, cook 6 minutes, cool, peel.

Use low sodium broth and soy sauce.

Replace wine with broth if preferred.

Bok Choy can be swapped with spinach or kale.

Store 3 days in fridge or 3 months in freezer.
