Description

Easy Crock Pot Cream Cheese Chicken Chili is a creamy, flavorful slow cooker recipe made with tender shredded chicken, beans, corn, Rotel tomatoes, and smooth cream cheese.


Ingredients

1 can (15 oz) black beans

1 can (15.25 oz) corn, undrained

1 can (10 oz) Rotel tomatoes, undrained

1 packet ranch dressing mix

1 teaspoon cumin

1 tablespoon chili powder

1 teaspoon onion powder

1 package (8 oz) light cream cheese

2 chicken breasts


Instructions

1. Drain and rinse the black beans.

2. Place chicken breasts in the bottom of the slow cooker.

3. Add corn, Rotel tomatoes, and black beans on top of the chicken.

4. Sprinkle ranch dressing mix, cumin, chili powder, and onion powder.

5. Stir gently to combine.

6. Place the cream cheese block on top.

7. Cover and cook on low for 6-8 hours.

8. Remove the chicken from the slow cooker and shred it.

9. Return the chicken to the chili.

10. Stir well and serve warm.

Notes

Recipe adapted from Plain Chicken.

Use full-fat cream cheese for richer flavor.

Add more Rotel for a spicier chili.

Serve with tortilla chips, cornbread, or warm rolls.
