Description
This Easy Cheeseburger Soup combines ground beef, tender vegetables, potatoes, and creamy Velveeta cheese in a hearty, comforting bowl. Perfect for weeknight dinners and family gatherings.
Ingredients
1/2 pound ground beef
4 tablespoons butter, divided
3/4 cup carrots, diced
3/4 cup celery, diced
3/4 cup onion, diced
1 teaspoon dried basil
1 teaspoon dried parsley
4 cups potatoes, diced
3 cups chicken broth
1/4 cup all-purpose flour
1 to 2 cups Velveeta, cubed
1 1/2 cups whole milk
3/4 teaspoon salt
1/4 to 1/2 teaspoon black pepper
1/4 cup sour cream
Onion rings, green onions, and crumbled bacon for toppings (optional)
Instructions
1. In a large pot or Dutch oven, cook the ground beef for 6–8 minutes until browned. Drain and set aside.
2. Melt 1 tablespoon butter in the same pot. Add carrots, celery, onions, dried basil, and dried parsley. Sauté for 10 minutes until tender.
3. Add potatoes, cooked ground beef, and chicken broth. Bring to a boil, reduce heat, cover, and simmer 10–12 minutes until potatoes are tender.
4. In a small pan, melt 3 tablespoons butter. Stir in flour and cook 3–5 minutes until bubbling. Mix into soup and boil for 2 minutes.
5. Reduce heat to low. Stir in Velveeta, milk, salt, and black pepper. Once melted, remove from heat and stir in sour cream.
6. Top with onion rings, green onions, and crumbled bacon. Serve warm.
