Description

Tender slow-cooked lemon chicken with fragrant jasmine rice. A bright, comforting one-pot crock-pot meal.


Ingredients

4 boneless chicken thighs

1/2 lemon (zest and juice)

1/4 cup chicken broth

1/2 tsp salt

1/4 tsp pepper

1 tsp garlic powder

1 tsp onion powder

1/4 tsp crushed red pepper flakes

1/4 tsp paprika

1/2 tsp Italian seasoning

1 clove garlic or 1 tsp minced garlic

1/2 cup jasmine rice (uncooked)

1/4 cup water


Instructions

1. Place chicken thighs in the crock-pot.

2. Mix lemon zest, lemon juice, and chicken broth.

3. Combine all dry seasonings.

4. Pour lemon mixture over chicken.

5. Sprinkle seasoning blend evenly.

6. Add minced garlic on top.

7. Cook on high 2-3 hours or low 6-8 hours.

8. Add jasmine rice and water 20 minutes before serving.

9. Cook until rice is tender.

10. Serve with fresh parsley.

Store leftovers in the refrigerator for up to 5 days.
