Ingredients
6 cups potatoes, peeled and diced
1/2 cup bacon, cooked and crumbled
4 cups chicken or vegetable broth
1 packet ranch seasoning mix
1 cup cheddar cheese, shredded
1 cup heavy cream
Salt and pepper to taste
Instructions
1. Place diced potatoes, cooked bacon, and ranch seasoning into the slow cooker.
2. Pour chicken or vegetable broth over the ingredients.
3. Cover and cook on low for 4 hours or until potatoes are tender.
4. Stir in shredded cheddar cheese and heavy cream until smooth.
5. Season with salt and pepper to taste.
6. Serve hot, garnished with extra bacon or green onions if desired.
Notes
Use Yukon gold potatoes for extra creaminess.
Add extra cheddar for richer flavor.
