A rich and creamy Crock Pot Crack Potato Soup made with tender potatoes, cheddar cheese, bacon, and ranch seasoning.
Ingredients
1/2 cup cooked and crumbled bacon 6 cups diced potatoes 4 cups chicken or vegetable broth 1 packet ranch seasoning mix Salt and pepper, to taste 1 cup shredded cheddar cheese 1 cup heavy cream
Instructions
Wash, peel, and dice potatoes. Place potatoes, broth, ranch seasoning, salt, and pepper in crock pot. Cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender. Stir in heavy cream and cheddar cheese. Cook 15 minutes to melt cheese. Add bacon and stir or use as topping. Serve warm.
Notes
Add sour cream for extra richness. Use smoked bacon for deeper flavor. Top with extra cheese or green onions. Thicken with cornstarch slurry if preferred.
