A rich and creamy Crock Pot Crack Potato Soup made with tender potatoes, crispy bacon, cheddar cheese, and zesty ranch seasoning. Perfect for busy nights or feeding a crowd.
Ingredients
1/2 cup bacon, cooked and crumbled
6 cups potatoes, diced
4 cups chicken or vegetable broth
1 packet ranch seasoning mix
Salt and pepper, to taste
1 cup cheddar cheese
1 cup heavy cream
Instructions
1. Peel and dice the potatoes.
2. Add potatoes, chicken or vegetable broth, ranch seasoning, salt, and pepper to the crock pot.
3. Stir to combine and cover.
4. Cook on low for 6 hours or on high for 3 hours until potatoes are tender.
5. Stir in cheddar cheese and heavy cream until smooth.
6. Add crumbled bacon and stir well.
7. Serve warm, optionally garnished with extra bacon or green onions.
Notes
Use sharp cheddar cheese for more flavor.
For a thicker soup, mash some potatoes before adding cream and cheese.
This soup reheats well and can be stored in the refrigerator for up to 3 days.
