Ingredients

1 cup corn (canned or frozen)

3 cloves garlic

1 large onion

2 medium potatoes

14.5 oz canned tomatoes with juice

4 cups beef broth

1/2 tsp black pepper

1 tbsp chili powder

1 tbsp smoked paprika

1 tsp salt

1 tsp cumin

1 cup cheddar cheese

1 cup heavy cream

15 oz black beans (drained and rinsed)


Instructions

1. Brown the ground beef in a large pot.

2. Add diced onion, minced garlic, and chopped potatoes. Cook until softened.

3. Stir in chili powder, smoked paprika, cumin, salt, and pepper.

4. Pour in canned tomatoes, corn, and black beans. Mix well.

5. Add beef broth and bring the soup to a gentle simmer.

6. Cook until the potatoes are tender.

7. Lower heat and add heavy cream.

8. Stir in cheddar cheese until melted.

9. Serve warm and enjoy.

Notes
