Ingredients
3 slices bacon
2 tablespoons butter
2 tablespoons all-purpose flour
3/4 cup evaporated milk
1 tablespoon olive oil
1 onion, diced
1 pound ground beef
1 (10 ounce) can diced tomatoes with green chilies
1 (15 ounce) can ranch style beans, drained
1 (15 ounce) can corn, drained
2 cups beef broth
2 potatoes, diced
3/4 teaspoon granulated garlic
1/2 teaspoon ground cumin
Salt and freshly ground black pepper, to taste
Instructions
1. Cook bacon in a large skillet over medium-high heat until evenly browned; drain and chop.
2. In a saucepan, melt butter over medium heat and whisk in flour; slowly add evaporated milk and cook until slightly thickened, then remove from heat.
3. Heat olive oil in a large pot or Dutch oven; sauté onion until translucent.
4. Add ground beef and cook, breaking it apart, until browned; drain excess fat.
5. Stir in bacon, tomatoes with green chilies, beans, corn, beef broth, and potatoes.
6. Season with granulated garlic, cumin, salt, and pepper.
7. Bring to a boil, reduce heat, cover, and simmer until potatoes are tender.
8. Stir in the evaporated milk mixture until fully combined.
9. Serve hot and enjoy.
