Description

A rich and cozy creamy chicken and rice soup made with tender chicken, soft vegetables, jasmine rice, and a velvety broth. Perfect for cold days and simple to prepare.


Ingredients

1 tablespoon olive oil

1 stick celery, finely chopped

2 medium carrots, finely chopped

1/2 medium onion, chopped

3 cloves garlic, minced

3 tablespoons flour

4 cups chicken broth

1/4 teaspoon Italian seasoning

3/4 cup uncooked white jasmine rice

1 cup heavy cream

1 pound chicken breasts, cut into bite-size pieces

Salt and pepper to taste


Instructions

1. Sauté celery, carrots, and onion in olive oil for 5-7 minutes.

2. Stir in garlic and flour and cook for 1 minute.

3. Slowly pour in chicken broth while stirring to dissolve flour.

4. Add Italian seasoning, rice, and cream.

5. Bring to a gentle boil, then reduce heat and partially cover.

6. Simmer for 10 minutes, stirring occasionally.

7. Add chicken and cook 7-10 minutes until chicken and rice are done.

8. Season generously with salt and pepper.

9. Add extra broth if soup becomes too thick.

Notes

Recipe serves 4-6 depending on portion size.

Rice absorbs broth quickly; add more as needed.

Cook rice separately if storing leftovers.

Do not use lower-fat substitutes for cream to prevent curdling.

Best enjoyed fresh; soups with cream and rice do not freeze well.
