Ingredients
1 (13.5-ounce) package Andouille sausage
1 cup bell pepper, red or green
1/2 cup carrots
1/2 cup celery
1 tbsp garlic
1 bunch green onions
1 cup onion
4 russet potatoes
3 cups chicken broth
1 dash Tabasco sauce
1 tsp black pepper
1 tbsp Cajun seasoning
1 tsp salt
1 tbsp olive oil
1 cup cheddar cheese
1 cup milk
1/2 cup whipping cream
Instructions
1. Slice the Andouille sausage and sauté it in olive oil until browned.
2. Add onions, celery, peppers, carrots, and garlic. Sauté until softened.
3. Transfer sausage and vegetables to the crockpot.
4. Add potatoes, Cajun seasoning, salt, pepper, and chicken broth.
5. Stir well and cook on low for 6 hours or high for 3 hours.
6. Mash some potatoes to thicken the soup.
7. Stir in milk, whipping cream, and cheddar until melted.
8. Add a splash of Tabasco for heat.
9. Garnish with sliced green onions before serving.
Notes
Adjust Cajun seasoning to your spice level.
Add more Tabasco if you love extra heat.
Serve with crusty bread or warm cornbread.
Soup thickens as it cools—add broth if needed.
