Description
BBQ Chicken Quesadillas are smoky, cheesy, and quick to make. Perfect for weeknight dinners, appetizers, or snacks.
Ingredients
2 cups cooked chicken
1/4 cup green onions, sliced
1/2 cup barbecue sauce
2 tbsp olive oil
4 large flour tortillas
2 cups cheddar cheese, shredded
Instructions
1. Combine cooked chicken with barbecue sauce and green onions.
2. Heat olive oil in a skillet over medium heat.
3. Place one tortilla in the skillet and add a layer of cheddar cheese.
4. Spread BBQ chicken mixture over the cheese.
5. Top with more cheese and second tortilla.
6. Cook until golden, then flip carefully to cook the other side.
7. Slice into wedges and serve warm. Optionally serve with sour cream or extra BBQ sauce.
Notes
Use rotisserie chicken for convenience.
Add jalapeños for extra heat.
Serve with your favorite dipping sauces.
